Spring is in the air!

For the first time in years spring has actually sprung early, thank you Jesus! With Easter arriving early this year I am so glad the weather will match the occasion and maybe we won't be wearing coats over our Easter dresses after all.

Today I wanted to share the perfect delicious & quick Easter dessert with you. It is something that you can whip up in a matter of minutes with the kids and is sure to leave your dinner guests, friends or whomever impressed!

Sometimes I want to make a special treat but I don't always have time to whip up a made from scratch dessert, especially during the busyness of spring. Anyone else in the same boat as me?!

Enter Mrs. Smith's & Edwards Pies.
They are a total game changer.

Recently while shopping at my local Wal-Mart I decided to stock up on a few items to get me through the next couple of months. Walmart has a HUGE variety of Mrs. Smith's & Edwards Pies. I try to keep one in the freezer year round, you never know when you might need dessert in a pinch. Oh the many times that I have been rescued by their convenience. Not to mention all of the times that we pull one out just because it is a Monday.

Right now you can save $1 on any Mrs. Smith or Edwards Pie purchase on Ibotta!
I recently signed up for Ibotta after my friend Anna recommended it and I am already loving it.

This particular shopping trip I had something extra special in mind. With Easter less than 3 weeks away, now is the time to start planning and preparing for all of the celebrations. I picked out my pies, headed home and got to work.

The pie is pretty perfect just the way it comes.
Those delicious layer and a homemade cookie crust make every bite delicious.

I decided that by adding a few simple ingredients I could turn this pie into something festive.

Easter Weekend!

Happy Monday!

I hope everyone had a great Easter weekend. We definitely did!

Let's do a little weekend recap.

Saturday we woke up EARLY. I got up at my normal 5:00'ish time. But, the girls and Russ had to get up much earlier than normal. I remember Russ laying in bed mumbling, "this was a terrible idea". We needed to leave early for Wyandotte, Ok (about 30 minutes away) for a 5K/ 1 mile fun run we had signed up for months ago.

This was my second official chip timed 5K and I was VERY excited. I ran faster and harder than I ever thought I could and I set a new personal record of 25:09! That was good enough to earn me 3rd place in the 21-30 year old females and I came in 7th out of 115 women. I couldn't be more pleased.

Me and my awesome running partner, all smiles after our race.

Yesterday morning, was Easter.

 I love Easter.

We had a great church service and came home to enjoy the end of our long weekend relaxing at home.

How was your Easter weekend?

Egg hunts and Monday blues.

Happy Monday? I must admit I am not in the best of moods today. For starters, it's Monday. Do I really need to explain why that makes one grumpy? Secondly, It is in the 30's and sleeting. Man you really do just have to embrace the craziness that is Missouri weather. We were wearing Sundresses and sandals to church not even 24 hours ago! So 1+1 unfortunately equals a bit of blah for me today. Maybe this post and some coffee will brighten things up a bit.

Saturday was the day for the annual Easter egg hunt that we take the girls to. The weather was a bit windy but AMAZING! After a lazy morning we got dressed, grabbed our buckets and headed out!

Daddy gave Emily a pep talk before the hunt.

She got a little bored waiting...

And eventually she ended up getting stuck.

When they said go, they went! Emily did great for being with the "bigger" kids this year.

I think the hunt lasted a whole 3 minutes, it was CRAZY! Of course there was a fair share of adults picking or scooping up the eggs, oh my!

We then headed for the long line so we could trade our empty eggs in for some candy!

After we made the swap we headed home!

And we instantly "needed" a piece as soon as we reached the car. We didn't mind, it made for a quiet ride home.

Looking at these pictures brightens my mood a bit. Plus daddy is working a short week, only 3 days. We have an exciting, busy long weekend planned! Hopefully this cold won't last long and we will have some better weather for it.

How was your weekend?
Did you hunt any eggs?
